It’s Been Awhile

Let’s be honest.  It is insanely hard to implement a perfect training plan, eat right, and keep up with regular blog posts. And in reality, I have not been keeping up with any of this things very well in recent weeks. 

It may have been a combination of factors, but I think I stretched myself so thin that I was unable to give 100% to any one specific area. For example, I was taking two full course loads at ASU to finish my M.Ed, as well as training in the Arizona summer for a 50 miler, while working full time and experiencing severe levels of stress at work. It was too much. 

I’ve been struggling to motivate myself as well as get back on track, and it’s been hard. But, this past week I somehow managed to get every scheduled mile in…all 56!  And, that including 18 miles on a treadmill in one day. 



I’m recommitting myself to my training plan, and of course this blog, in order to stay accountable. So, here we go into another wonderful week!

Some Weeks are Hard

This week was a struggle for me.  Work has been stressful, I’m taking my last courses for my Master’s program and ultra training in the summer…in Arizona, may have been a less than smart decision.

This week was rough.  I skipped my Monday workout and my Tuesday run.  I slept through my alarm on Wednesday, and nearly missed another run.  Somehow, I managed to salvage the week and ended up only a few miles below my goal for the week, with a grand total of 41 running miles.

I am at a point where ANY workout other than running sounds more appealing.  I am hoping this was due to my large amount of stress and lack of decent sleep, but I am thinking the 110 degree heat is not helping much.

Falling out of routine is so incredibly easy.  Even though I have been staying completely on track for many, many months, one day off track nearly ruined my whole week.  Literally, I began to talk myself out of running each day.  I had to say to myself, “Self!  You need to go run.”  I forced myself into my running garb, forced myself to drive to the gym, and then sat in the parking lot for another 10 minute before I was able to force myself through the door and onto the treadmill.  While this process was ridiculously hard, I instantly felt better after starting to run and was able to stay on track for the rest of the week.

Boxing Rocks my Socks

I’ve been looking for new ways to be active, while keeping it fresh and exciting. I’ve decided that I am going to try out a different exercise groupon each month, to help keep me on my toes.

This month, I signed up for unlimited classes at a local boxing gym. I’ve always wanted to try it, So what better time than with a discounted, no commitment, groupon?


I’m absolutely, positively in love with boxing!  I mean it!  Who would have thought that punching and kicking a bag could provide so much stress relief while toning the core and upper body, all at the same time.

This particular boxing gym is quite far from me, so after the month groupon is up, I plan to invest in a bag for home. This sounds like a family activity that everyone can enjoy!

Next month’s groupon has already been purchased, and let’s just say, I’m super hot for hot yoga!  Can’t wait to get started, but still throughly enjoying punch, punch, punching things!

Rice Salad with Fennel, Oranges, and Chickpeas

Recently, I purchased Forks Over Knives the Cookbook.  Tonight I made the first recipe, Rice Salad with Fennel, Oranges, and Chickpeas.  It was super easy to make, and well worth it!  I tripled the recipe to make enough for dinner for the week, so I’m glad it turned out delicious.

This recipe is super easy to make.  Simply cook the rice, and while it’s on the stove, prep everything else.  I zested the oranges and broke them into segments.  I cut the fennel bulbs, and mixed them together with the chickpeas, red pepper, parsley and white wine vinegar.

That’s it.  It was that simple and tastes delicious.  This is definitely one to repeat!  Try it out, and let me know your thoughts!

Review: Amphipod Hydraform


The Amphipod Hydraform handheld water bottle is amazing!  I feel especially lucky to have been able to give a try as part of being a BibRavePro, because I am seriously in love with it.

This bottle comes in several sizes.  I have the 20 ounce version, and it far exceeded my expectations.  First of all, I love the shape of the bottle.  I have run up to 14 miles holding this bottle at one time, and totally forget I even have it on my hand.

There is enough room to fit my iPhone 6 in the storage pouch, as well as elastic gel holders on the backside.  However, I have been able to fit my fuel into the pocket with my phone with no issue.

Many different handheld bottles are circular in shape, but the hydraform if flatter, so it better fits against your hand.  I love the ease of being able to squeeze water into my mouth on the go, and the insulated case keeps the water cool for long periods of time, even in the Arizona heat.  My previous handheld warmed up very quickly, so the hydraform was a pleasant surprise.


I highly recommend the hydraform to anyone in the market for an awesome handheld water bottle.

Meatless Monday: Luvo Review

I got the opportunity to try out the Luvo ready-made meals. As I am really careful about what I eat, I appreciate a company that works hard to use responsibly sourced, high-quality ingredients and materials.

The resourcefulness of the company can be seen from the exterior packaging which is made from 100% recycled paperboard with 75% post-consumer waste to the steam pouch which contains unbleached paper made from 20% pre-consumer waste and uses soy or waterless inks.


Additionally, Luvo promises to use non-GMO food ingredients, which means you know what you are putting in your mouth.

I excitedly ate my steel-cut oatmeal with quinoa and mixed fruits, and was super impressed!  It tasted just like I had made it on the stove and added fresh fruit!  Delicious!  So glad I had another for the next day!


Luvo also makes a wide variety of lunch and dinner meals, however as of today, only the steel-cut oatmeal is vegan. They do have several additional vegetarian options including the following:

Weekly Recap: 6/19/16

This week was hard.  With traveling last weekend, and then escaping to California mid-week, and training would have been complicated.  However, this past week, my weekday mileage increased as did my weekend miles.  I felt like I was running, running, running all week long.

My normal 6 miles on Wednesday and Thursday were both bumped to 8.  I was able to squeeze my Wednesday rolling hills workout in before we left for Universal Studios, which was fantastic!  I don’t know how I spent so many years living in Southern California without visiting Universal.  The Wizarding World of Harry Potter was impressive, and after spending so many years in Disneyland, I couldn’t believe how short the waits were for Universal rides.  I highly recommend checking it out if you have the chance.  I also recommend buying your tickets through Undercover Tourist (I am NOT affiliated).  I saved about 20 bucks per ticket!  They have discounted tickets to many major theme parks including Disney, and Seaworld (if you are in to that sort of thing).

Another pleasant surprise was that there were quite a few vegan food options within the park!

I also really enjoyed my run in Orange County.  Here in Arizona, I have to travel to find rolling hills to run but I was able to walk right outside, step on a multi-use paved path and run some hills.  I always forget how hilly Orange County really is, and I also forgot how many people live stuffed into one small area.  It was great to escape the heat for a few more days.
